In a recent professorial lecture I argued how a Restaurant reflects every major industry. They may seem like easy businesses to start but they are extremely hard to master.
In the UK we have 4 to 6 closing daily!
This is why training restaurants as labs in Higher Education are crucial because they are a microcosm of almost every major discipline and we need leaders and entrepreneurs that trully get it!
You may think I stretch reality but allow me to explain my thesis:
🌿 Pharmaceutical & Biotechnology → The herb garden, nutrition, wellness ingredients, food science and functional foods.
🏭 Manufacturing & Operations → The kitchen is effectively a factory, transforming raw materials into finished products while maintaining quality, consistency and efficiency.
🛒 Retail & Merchandising → The bar and beverage operation involve product selection, inventory management, pricing and customer purchasing behaviour.
🧠 Psychology & Behavioural Science → Reading guests, understanding emotions, designing experiences and influencing purchasing decisions.
📊 Finance, Statistics & Data Science → EPOS systems generate vast amounts of data that can be analysed to improve profitability, forecasting, pricing and operational performance.
🍷 Sales & Revenue Management → Upselling wine, promoting specials, increasing average spend and building customer loyalty.
🎨 Creative Arts & Design → Menu engineering, recipe development, plating, storytelling, branding and atmosphere creation.
🚚 Logistics & Supply Chain → Sourcing ingredients, managing suppliers, inventory control and ensuring product availability.
👥 Human Resource Management → Recruitment, training, motivation, leadership and organisational culture.
📣 Marketing & Communications → Social media, branding, public relations, customer engagement and reputation management.
⚙️ Engineering & Facilities Management → Equipment maintenance, energy systems, safety and operational reliability.
🌱 Sustainability & Environmental Science → Waste reduction, circular economy practices, ethical sourcing and carbon footprint management.
🏨 Front of house→ Service excellence, customer experience design and operational coordination.
The restaurant therefore becomes an ideal case study for demonstrating how academic & industry disciplines are interconnected rather than existing in isolation.
When students ask, “How does my subject relate to the real world?”, I say ..."we are the real world" .
Every plate served is the result of science, psychology, management, creativity, technology, logistics, finance and human behaviour working together.
Perhaps the restaurant is one of the most interdisciplinary organisations we can study.
