Ioannis spends an evening in the Kitchen with Chef Sean Owens preparing two recipes Imam and Yianikopita! The evening before a staff planning day we had fun with students and Chef O in the training Kitchens. When Chef O first joined us a promise was made that one day I would cook Greek with him. Well, Imam Bayildi is not quite Greek but it is one of my favourite dishes and it brings memories of Mum when she used to make it for us so this was my adaptation of memories of her recipe. The other dish was an adaptation of Spanakopita. The Filo was made from scratch, in the same way, Mum used to make her own filo for her Tyropita and Spanakopita. My adaptation of the filling included Kale instead of Spinach (Kale was in season) and adding some pine nuts was Chef O's idea. The next day, during our dept planning day both dishes escorted other delicacies for our staff lunch and I was getting worried that I had cooked too much only to see a few minutes later that both dishes were completely gone!
