I am writing this article on my way back home from London, after an amazing day at Westminster Kingsway College.
The train is packed and I may be exhausted but my face still beams with pride and hope for the future of this industry.
In a room full of hospitality students and professionals from all sectors of our industry we where treated to the research, wisdom and philosophy of ten amazing speakers. Each had their own message to deliver each had their own nugget of wisdom to add and the questions and interaction from the audience made this an event to remember.
First came Katie Haycock from Wrap reporting some of the outcomes of recent research relating to hospitality waste management. The figures were jaw dropping and Katie’s excellent delivery made the first session an excellent start to the day.

Managing director of the Cavendish, Ciaran Fahy continued with the case study of his own hotel sharing snippets of wisdom that had practical applications in many sectors of our industry and not just hotels.

A timely follow up by entertaining and though provoking Speaker John Firrell of Considerate Hoteliers, delivered numerous examples of how sustainability can be achieved effectively.

Kelly Parsons and Duncan O’Brien from the Ethical eats team of Sustain delivered a presentation with some great content ranging from food waste to overfishing to meat consumption and consumer perceptions.

After a well deserved lunch break the audience listened to Tahel Bar-EL of Fareshare who highlighted the immeasurable amount of food waste that could easily be utilized effectively to feed people who can not afford to feed themselves.

From the Sustainable Restaurant Association, Ed Franklin explained the progress SRA is achieving in ensuring restaurant members become more sustainable than ever before.

Nick Mead of Eden Caterers presented another most interesting case of his Green Catering company alerting the audience to the fact that often common sense and a commitment to a sustainable philosophy is all you need to ensure your company is achieving great results. From the bee hiving lessons he delivers from the back of his garage to the policy of maximizing daylight use in the company premises, Nick reminded all of us that there is more we can do than just hope.

The Chief Executive of the Institute of Hospitality, Philippe Rossiter presented the Institute’s strategy towards sustainability and the future in general.

Last but not least Geoff Booth of Westminster Kingsway College delivered his vision of the Sustainable College of the future.

The closing of the day saw a short presentation from the WKC team competing for the EMCUP in Amsterdam. A presentation about the second year of the Passion 4 Hospitality competition was also delivered by IoH associate Malcolm Kandulu ( 11p4hMalcolmKandulu.pdf ) .
The very last element which added even more excitement to the whole day and ended the day on a high was the competition by the two shortlisted teams which represented the University of Brighton – Dionysian Scholars, and the Westminster Kingsway College teams.
The judges had to deliberate extensively as both teams submitted brilliant videos, and although the University of Brighton video seemed to have the edge it was the 2 minute pitch that in the end turned the voting in favour of Westminster Kingsway College.
So Congratulations must go to the Winners WKC team as well as the runners up The Brighton University – Dionysian Scholars Society.

At this point I must thank the Institute of Hospitality and Westminster Kingsway for their most generous sponsorship. Thank you must also go to our great speakers this is the first time in my career that every single organization or individual I have invited has contributed their time and effort freely without a second thought. Your commitment to the notion of sustainability and responsibility is truly inspiring.
Of course I must not forget our guests. The students who chose to be there and contribute to some wonderful discussions. We had the pleasure of student delegations came from Croydon College, Oxford Brookes University, University of Surrey, University of Brighton and Westminster Kingsway College. I would like to thank colleagues in those educational organisations for promoting the event to their students.
I also thank the industry professionals who showed their support by joining us for the day. The students are the future but the professionals are the gatekeepers together we can ensure a much brighter future for our industry.
Finally I have to say that for me this is an emotional semi-goodbye to my IoH London Branch colleagues, (I promise to try to attend some future London events – you can’t get rid of me completely that easily). Although I will miss my IoH London Branch colleagues, I know they will always be friends that I very much hope to keep in touch with. Thank you so much for allowing me to be part of a great bunch of amazing hospitality individuals.
